Fitness Challenge – April 30 – Cheesecake

Hey Y’all,

I’ve got some cheesecake for you. Eric Borio, technically, has some cheesecake for you. This is his recipe that he’s sharing with the team.

I do also have a workout for you too (see below). I wanted to get outside and share another outdoor workout with the team today, but…you know…

In the meantime, make some cheesecake and get beefy.

Killer Keto Cheesecake:

Ingredients
Crust:
-2 cups almond flour
-8oz melted butter
-Half table spoon stevia
-Half table spoon cinnamon

Filling
48 ounces of creamer cheese
8 ounces of sour cream
5 eggs
1/3 cup stevia
2 teaspoons vanilla extract
1 tablespoon cinnamon

Directions:

Crust
-Preheat oven to 300 degrees
Mix together
Mid together metled butter almond flour stevia and cinnamon until you get a gummy consitency. Line the bottom of a large cake pan with the crust h til evenly distributed.

Filling.
-Whip the cream cheese at room temperature until it reaches a soft consistency.
-slowly mix in each egg untill a batter begins to form
-mix in 8 oz of sour cream
-mix in the remaining cinnamon, vanilla and stevia. Proportions can be adjusted to taste.
-once batter is fully incorporated fill your cake pan.
-Bake in 300 degree oven for 50minutes.
-open the oven door and let it continue to bake for
10 minutes.
Turn off the oven and let the cake rest for 30 minutes inside.
– let the cake chill in the refrigerator for 8 hours or overnight.

Top with fruit of your choice.

If you aren’t feeling keto and want to treat yourself, you can substitute the stevia in the batter for 2 cups of regular sugar. (If you plan on using any other sweetener find out the correct proportions to match 2 cups of regular sugar)

For the crust you can substitute the stevia, cinnamon and almond flour for 2 cups of finely crushed Graham cracker or Oreo cookie.
